But he LOVES cheddar biscuits! I found a knock off recipe online for Cheddar Bay Biscuits like the ones found at Red Lobster and made them for him and last night and he ate…and ate…and ate them! Needless to say, they were very good! I didn’t take any pictures but I will post the recipe below if any of you would like to try them. I highly recommend it!
That was about the extent of our exciting weekend. We went bowling yesterday morning and I have to say that I am very out of shape! By the end of two games my arm was shaking when I was holding the ball and it took everything I had to get it out on the lane! Shawn doesn’t think he is quite ready to bowl yet. He got through one game and had to finish by bowling straight because of his wrist. We are thinking he needs a second opinion. He was told by his original doctor that is should be healed by now but it isn’t. We will see…
So yesterday at the store we were buying groceries for the next two weeks. Normal trip. I was on a limited budget so I was looking at cuts of meat that were on sale or cheaper than others and I stumble upon Beef Ribs and debate with myself on buying them because I prefer Pork. However, they were on sale for .99 a pound! I ask Shawn if he liked Beef Ribs and his response was “not really.” So, what did I do? I bought them! Neither one of us cared for beef ribs but they were only .99 a pound! How could I pass that up? So, instead of cooking them out on the grill I put them in the crock pot with some onion, bell peppers, garlic and celery. I added some Worcestershire sauce, Pepper sauce, and water and set the timer on low for 10 hours. I was hoping that by cooking it this way for so long that it will be more like shredded beef and not so much “ribs.” I was wrong, they were not bad, just tasted like a roast. But for .99 a pound, I'll take it!
Cheddar Biscuits:
2 C Bisquick
2/3 C Milk
¾ C Shredded Cheddar Cheese
1 tsp garlic salt
¼ C Melted Butter
2-3 TBS White Wine (if you have it)
1 tsp garlic powder
Preheat oven to 450 degrees. Lightly grease cookie sheet. Combine Bisquick, milk, cheese and garlic salt in a bowl. I use a wooden spoon to mix it up. Do this until a soft dough forms. Drop by spoonful onto the greased cookie sheet. I use an ice cream scoop to spoon the batter. Bake for 10-12 minutes.
While the biscuits are cooking combine the melted butter, white wine and garlic powder. When the biscuits are golden brown take them out of the oven. Spread the butter/garlic mixture on top with a pastry brush. I sprinkle a little of Cajun seasoning on top for an added kick but that is optional.
